Step To Make Goja

To make the recipe of goja. you have to take 500 gms of flour, take it according to how much you want to make add some salt in it so that it does not taste discolored. then add baking soda in it. Baking soda contains aluminum sulphate. and calcium phosphate which gives softnes. Sweet soda contains bicarbonate of soda, wich will keep it crispy from outside and according to me better results are obtained with bicarbonate of soda.

First you have to mix salt and soda well .then add half a cup of heated ghee if you want you can 1/4 cup of oil. After than you add 200ml of water. and slowly start mixing it well. the best thing about this recipe is that there is no need to knead or knead the dough. And just add the flour and as soon as your is added if you go. Assume that the dough is set and let the dough rest for 20 minutes.

How to make Syrup

While the flour is being rested prepare the syrup by adding one cup of water to two cups of sugar, as soon as it starts boiling. Add crushed saffron and two-three cardamoms and cook till the sugar and water mix well and a thin syrup is formed, and then add the juice of half a lemon.

Start To Make Goja

After letting the dough rest the dough will become soft. after that make the dough bigger. Roll it out and then after rolling it, divide it into four parts with a knife. After that keep the layers one above the other and roll them. This process has to be done four to five times. Then it has to be made square. And we have to divide it into four parts. Water has to take the bell for the last time. Have to make it square again. Gotta keep it a little thick. This is the reason for keeping it fat. There is complete softness inside, then you have to cut the pieces.

Then you have to heat the oil accordingly. Goja has to be fried in hot oil only. Keep the gas on medium low flame. And cook it well take 15 to 20 minutes to fry one lot. Then transfer the goja into the hot syrup read more.
