- ½ cup chopped sweet potato
- ½ cup chopped raw banana
- ½ cup chopped pumpkin
- ½ cup chopped carrot
- ½ cup chopped beans
- ½ cup chopped drumsticks
- ½ tsp turmeric powder
- 1 cup water
Keep a clay pot on medium flame and allow it to warm up. And put curry leaves in it to allow them to roast for 2-3 mins. Then we’ll add these 6 veggies to it sliced vertically into 2 inch pieces remember this cutting style. Add ½ cup chopped sweet potato,½ cup chopped raw banana, ½ cup chopped pumpkin, ½ cup chopped carrot, ½ cup chopped beans, ½ cup chopped drumsticks, ½ tsp turmeric powder. Sauter all the veggies for 3 mins. Add 1 cup water and mix it and cover the veggies with a lid. Allow them to cook for 7-8 mins till they have softened. Till the veggies are cooking, let’s prepare our gravy.
Ingredients For Gravy
- ⅔ cup thick coconut milk
- 1 cup grated coconut
- 1 tsp cumin seeds, roasted
- 12-14 curry leaves
- 1 medium green chill
- 1 tsp rock salt
To prepare the gravy –
Need 2/3rd cup thick coconut milk. Be careful to use only thick coconut milk, or else the gravy will turn out really thin. To make thick coconut milk, we use coconut and water in equal quantities. Take a mixer and 2/3rd cup chopped coconut to it and 2/3 cup water, and blend it together. Now sieve it with a thin muslin cloth and your thick coconut milk is ready.
Keep it aside. Now add 1 cup grated coconut to a mixer. You can even use the leftover coconut roughage from your coconut milk. ⅔ cup thick coconut milk,1 cup grated coconut,1 tsp cumin seeds, roasted,12-14 curry leaves,1 medium green chill,1 tsp rock salt. Turn on the mixer, but don’t blend it for too long. We don’t need to make a smooth paste out of it. But a little powdery.

2. How To Prepare Lemon Rice ?
Ingredients For Lemon Rice
- ½ tsp mustard seeds
- 6-8 curry leaves
- ½ cup raw brown rice (soaked before)
- 3 cups water
- ½ tsp turmeric powder
- 1 tbsp lemon juice
- ½ tsp jaggery powder
- 1 tsp rock salt
Take a clay pot to make your lemon rice and add ½ tsp mustard seeds and 6 – 8 curry leaves. Allow them to roast for 2-3 mins on a medium flame. Then we’ll add brown rice to it. It’s important to soak them in water before adding them.
In total, you have to soak ½ cup brown rice. They will swell up and become a little bigger. Add the whole quantity to the pot , add 3 cups water, ¼ tsp turmeric powder. Covet the lid and allow the rice to cook for 25 mins. Once the rice is cooked, turn off the gas and add 1 tbsp lemon juice, ½ jaggery powder,1 tsp rock salt. Mix it well together. 3.How To Make Coconut Stew and Spinach Appams Recipe ?
Ingredients For Coconut Stew Spices
- 8 fenugreek seeds
- ½ tsp mustard seeds
- 1 bay leaf
- 2 star anise
- 1 cinnamon stick (2″)
- 2 cloves
- 1 tsp chopped ginger
- 1 green chili, finely chopped,
- 25 fresh curry leaves
Vegetables
- ¼ cup chopped drumsticks
- 1 cup chopped potato
- ½ cup fresh green peas
- ¾ cup water
- 1 cup chopped cauliflower
- ½ cup chopped pumpkin
- ½ chopped carrot
- ¼ cup chopped green beans
- ¼ cup coconut milk
- 1 tsp rock salt
Keep 1.5 thick coconut milk ready before you make it. Then we’ll prepare our spice mix. Place a clay pot on low flame and add 8 fenugreek seeds, 1 bay leaf, 2 star anise, 1 cinnamon stick (2″), 2 cloves. Roast them all for 3 mins. You’ll sense the fragrance of these spices spreading throughout your kitchen. Now add 1 tsp chopped ginger, 1 green chili, finely chopped, 25 fresh curry leaves. Roast them for another minute.
Now add ¼ cup drumsticks to the pot, chopped into two pieces. 1 cup chopped potato, ½ cup fresh green peas, ¾ cup water. Mix all the veggies, cover it with a lid and allow it to cook for 3 mins on medium flame. Then add the rest of the veggies to it. Add 1 cup chopped cauliflower, ½ cup chopped pumpkin, ½ chopped carrot,¼ cup chopped green beans. Cover the lid and allow the veggies to cook for 15 mins on medium flame.
After 15 mins, turn off the gas and add ¼ cup coconut milk, 1 tsp rock salt. Mix everything well, cover it with a lid for 5 mins, and then serve your hot coconut stew. If you don’t like spending too much time in the kitchen, you can simply enjoy this coconut stew with brown rice.

4. How To Make Spinach Appams Recipe ?
Ingredients For Appams
- ¾ cup soaked brown rice
- ¼ cup chopped spinach
- 1 cup water
You need to do some pre-prep, First soak 3/4 cup brown rice for 6 hours. Then 6 hours later, remove the water from the brown rice and add the rice to a mixer. Add ¾ cup soaked brown rice, ¼ cup chopped spinach, 1 cup water and Mix everything and make a paste out of it. Add this batter to a big steel or glass bowl. You can make 6-7 appams from it. Now add 8 green chili tops to it for fermentation.

Which naturally ferments our batter. We don’t have to add yeast or any artificial fermenting agent. Cover the bowl with a plate and place it on a warm place on the counter or kitchen cabinet and allow it to ferment for 15 hours. Keep in mind not to expose it to sunlight or else this batter won’t ferment.
15 hours later, you’ll find something slightly fluffy. That means it has fermented well. If your batter ferments and gets too dense. Add 1/4 cup water, if the consistency is fine, then no need to add water.
The consistency of the batter should not be too thick, not too thin. Then take a heavy cast iron pan. First allow the pan to heat up on a high flame. If your pan is already greased, you don’t need oil. If it’s not greased, then just add 2 drops of oil. Then when the pan is hot, sprinkle some water on it and wipe it off with a cotton cloth. It’s very important to do this. Now we’re ready to make our appams. Add a ladle full of batter on the pan. Be careful not to spread it. Allow the batter to become round by itself.
How do you know if your batter consistency is right or not ?
If it spreads onto the pan and makes a 6 inch circle, then the consistency is perfect. The diameter of the appam should be 6 inches. You can measure the length of anything even on your phone these days. When your appam starts developing little bubbles, then cover it with a lid or plate and cook it for 2-3 mins on medium flame. When it’s cooked from the middle, place it on a plate and serve it with coconut stew.
